Abbaye de Belloc atau Abbaye de Notre-Dame de Belloc adalah keju Prancis bertekstur keras yang dibuat dengan menggunakan susu domba yang tidak dipasteurisasi terlebih dahulu. Keju ini pertama kali ditemukan oleh para biarawan Benediktin. Tekstur dari keju ini padat dan keras sedangkan rasanya seperti karamel hangus. Keju Abbaye de Belloc memiliki aroma khas yang seperti lanolin. Berat dari keju tersebut adalah 5 kilogram dengan bentuknya yang seperti roda. Kulit dari keju ini berwarna kecoklatan dengan sedikit warna merah, oranye, dan kuning. Untuk memproduksi keju ini, digunakan susu dari domba Manech yang merupakan keturunan dari domba berkepala hitam (Manech Tête Noire) dan domba berkepala merah (Manech Tête Rousse).
