Brioche atau brios adalah sebuah roti diperkaya tinggi asal Prancis, yang kandungan telur dan menteganya yang tinggi menghasilkan remah roti yang kaya dan lembut. Roti ini agak mengembang sesuai proporsi mentega dan telur. Roti ini memiliki kulit gelap, emas, dan rapuh.
Brios dianggap sebagai bagian dari Viennoiserie.
