Coto Kuda adalah sebuah jenis soto khas Jeneponto, Sulawesi Selatan. Selain coto kuda masih ada beberapa kuliner khas Jeneponto yang berbahan dasar daging kuda yang pemasakannya memerlukan waktu sehari semalam. Coto berbahan daging kuda justru terasa lebih empuk daripada daging sapi, mengandung banyak protein, serta kurang lemak. Daging kuda mengandung potasium dan mineral yang dapat mencegah penyempitan otot. Vitamin yang terkandung pada daging kuda dapat meningkatkan imunitas tubuh dan mengandung kalsium yang berperan untuk menyehatkan gigi dan tulang terutama pada anak-anak. Coto Kuda yang disajikan dimasak dari daging kuda segar.




Bahan-bahan


2 kg daging kuda beserta usus, hati, dan otak kuda.
2 batang sereh
250 ml santan
10 bawang merah
5 bawang putih
3 buah daun salam
2 buah jeruk nipis
3 cm jahe
5 cm lengkuas




Cara membuat


Rebus daging kuda, usus, dan hati. Saat merebus, masukkan lengkuas, jahe, dan daun salam. Setelah matang, angkat dan tiriskan.
Potong jeroan kuda menjadi dadu-dadu kecil.
Siapkan wajan kemudian panaskan minyak. Tumis bumbu-bumbu yang sudah dihaluskan hingga matang dan berbau harum.
Masukkan bumbu ke dalam panci yang berisikan daging serta jeroan daging kuda.
Panaskan sampai mendidih kemudian masukkan santan.
Diamkan beberapa saat. Setelah benar-benar matang matikan kompor.
