Kaempferol (3,4′,5,7-tetrahydroxyflavone) merupakan salah satu anggota flavonol yang digolongkan sebagai flavonoid. Umumnya, kaempferol ditemukan pada tumbuhan seperti kacang-kacangan, teh, bayam, hingga brokoli.
Secara fisikokimia, kaempferol memiliki ciri khas berupa padatan kristal kuning dengan titik lebur 276–278 °C. Kaempferol sedikit larut dalam air dan sangat larut dalam etanol panas, eter, atau DMSO. Penamaan kaempferol didasarkan pada ilmuwan Jerman Engelbert Kaempfer
Biosintesis
Tahapan biosintesis kaempferol terjadi pada empat tahap utama, yaitu:
Pengubahan fenilalanin menjadi 4-kumaroil-CoA,
Penggabungan 4-kumaroil-CoA dengan tiga molekul malonil-coA membentuk khalkon naringenin menggunakan enzim khalkon sintase,
Khalkon naringenin diubah menjadi naringenin dan ditambah sebuah gugus hidroksi untuk membentuk dihidrokaempferol, dan
Penambahan ikatan rangkap pada dihidrokaempferol membentuk kaempferol.
Asam amino fenilalanin dibentuk dari jalur sikimat, salah satu jalur biosintesis asam amino aromatik. Umumnya, jalur ini terjadi pada plastid tanaman dan menjadi jalur masuk biosintesis fenilpropanoid. Jalur fenilpropanoid merupakan jalur yang mengubah fenilalanin menjadii tetrahidroksikhalkon. Hasil proses biosintesis pada jalur ini adalah flavon, slaah satunya kaempferol.
