Nimono (煮物code: ja is deprecated ) adalah hidangan rebus dalam masakan Jepang. Nimono umumnya terdiri dari bahan dasar yang direbus dalam kaldu shiru dan dibumbui dengan sake, kecap, dan sedikit pemanis. Nimono direbus dalam shiru selama periode waktu tertentu sampai cairan diserap ke dalam bahan dasar atau menguap. Bahan-bahan untuk membuat nimono biasanya terdiri atas sayur, ikan, makanan laut, atau ampas tahu, baik dibuat secara terpisah atau dikombinasikan semuanya. Kaldu shiru untuk nimono umumnya dashi. Selain sake dan kecap, kaldu dapat dibumbui dengan mirin, gula, garam, cuka, miso, atau bumbu lainnya. Panci tertutup digunakan dalam membuat nimono agar menyebarkan panas secara merata ke seluruh bahan-bahan selama proses perebusan.
