Etimologi
Kata "pakoṛā" berasal dari Sanskerta पक्ववट (pakvavaṭa), suatu gabungan dari pakva ('dimasak') dan vaṭa ('sebutir kecil') atau turunannya vaṭaka, 'kue bulat yang terbuat dari kacang-kacangan yang digoreng dalam minyak atau mentega'. Kata "Bhajji" berasal dari kata Sanskerta Bharjita yang berarti digoreng.
Penyediaan
Pakora dibuat dengan melapisi bahan-bahan, biasanya sayuran, dalam adonan berbumbu, dan kemudian menggorengnya dalam minyak.
Varietas umum pakora menggunakan bawang, masoor dal (kacang lentil), suji (semolina), ayam, akar dan daun Talas, terong, kentang, cabai, bayam, paneer, kembang kol, mint, pisang kepok, atau jagung muda.
Adonan umumnya terbuat dari tepung gram atau campuran tepung gram dan tepung beras tetapi variasi dapat menggunakan tepung lain, seperti tepung soba. Bumbu yang digunakan dalam adonan tergantung pada selera masak dan mungkin dipilih berdasarkan tradisi lokal atau ketersediaan; seringkali termasuk rempah-rempah segar dan kering seperti cabai, fenugreek, dan ketumbar.
